Tasty's and Sweet's



Hi Everyone!  How have ya'll been?  I've been MIA because I've been care-taker to my grandmother as usual and now my mom.  My mom slipped and fell on the ice three weeks ago and she hasn't been able to walk very well since then.  So, obviously I have taken on a lot more than usual.  It's been a real test of my patience!

I also have had to step up and make dinner every night for everyone.  I've enjoyed it, but struggle to think of something new to cook daily. But, check out the picture of the quiche I made.  We liked it so much I ended up making two pies with cheddar, tomatoes, onion, and spinach; and another night I made two pies with cheddar, tomatoes, and broccoli.  YUMMO!

Tonight I got a break from care-taking so I decided to bake some treats.  I made a modified cherry cobbler using the berry buchle cake mix from Tastefully Simple.  It was really good, but the berry buchle mix was very sweet.  I also made a peanut butter and brownies.  It is really rich and chewy! I love it!  I got the recipe from one of the blogs that I blurf (blog surf) Bakerella.  I blurf a few other food/baking blogs and will eventually put their links on my blog at some point.

By the way, as I type this, I'm feeling some anxiety creeping up. I've been a little stressed out so I'm sure that's why I'm feeling anxious.  If you all do not know by now, I have anxiety and panic disorder. When I'm going through bouts of anxiety and panic, my quality of life really sucks.  For about 3-1/2 weeks I've been doing pretty good! No major attacks and the anxiety has been controlled with holistic measures and Xanax.  Quality of life is looking up for me again!

 

I went to an endocrinologist last week and I'm waiting on my lab results. This doctor has to be about the biggest ass I have ever met, and I have met quite a few doctors. I'm hoping that the lab results will give us some insight as to what is going on with my thyroid. I've been hypothyroid for almost 15 years and lately it's been a problem. It has caused extreme fatigue, lethargy, muscle aches, headaches, and anxiety. I've gotten past the worst of it, but still have all those symptoms, just at a lesser degree.  I glad that I am able to function and go about my daily life. Although, I am curious as to what is going on. Say a prayer that it's nothing serious.  Thanks!

I'm going to end my babbling now and show you some pics of my yummy dishes. I'll post the website where I found the original recipe for the quiche, and then I'll put "my" tweaked recipe underneath.

Got the SweetIM link from Tracy Down Under who apparently got it from you! She said we could use it in our blogs, etc. We'll see if it got in here! I NEEEEEED the peanut butter brownie recipe! LOL Like a hole in my head, but who cares!

Hi Kathy ~ Those brownies are soooo good! I tweaked the recipe a little bit. Here's the link for the original recipe, but since I felt it was too much chocolate for me, I decided to change the recipe for peanut butter cookie mix. YUMMO!! Way better than I could have imagined!
