Crabby........ cakes that is!



Hi Everyone!  How are you all doing?  I hope everyone is having a nice Saturday and that you weather is well on its way to seeing the last of snowflakes! We supposedly had our last snow a few days ago - 3-1/2 inches.  Today, the sun is shining, a few clouds in the sky, but still nippy - 48 degrees. 

Update on grandma:  She is still pretty weak, but from my point of view, she is doing sooooo much better.  She has not stepped a foot out of the house for weeks, so I told mom it would be a good idea to put her in the car for a drive around the neighborhood for the fresh air and scenery.  Grandma put up a little fight, but then gave in.  After bundling her up like something out of Nanook of the North, off she went.  It must be going well so far because they are still gone. 

Side note:  It's been pretty stressful lately with taking care of her. She is requiring quite a bit of attention.  All I know is thank God that my mom and I can rely on each other.

Meanwhile, I have been making crab cakes for our dinner tonight.  I have never made them before and am amazed at how easy they are to make. And CHEAP!  I got a recipe off the Internet and as I went along, tweak it to our taste.

Does anyone have an easy recipe for crab cake dip/sauce?   The recipes I see on the Internet are a little too spicy, i.e., horseradish or Tabasco ingredients.  I can't handle that stuff and neither can mom or grandma.  Of course, I can always use tarter sauce, which we'll have with them tonight.

**Oh... Hello!  Grandma and mom are home now.  Her and her walker sprinted to the bathroom to tinkle! hahahahahhaha   Her face has a little more color in it. **

Now I'm off to make a batch of my favorite cookies to feast on tonight while veggin' out watching television and working on the charity afghan. 

Melisa's Simple Crab Cakes

Serves 4 - 2 each (I made a double batch)

Ingredients:
1/2 cup mayonnaise
1  egg
3 Tbsp  Onion, chopped
1/3 cup corn kernels, cooked
1/2-1 tsp Chipotle seasoning
1/2 tsp Garlic seasoning or minced garlic
1/3rd of package of imitation crab meat
1 and 1/2 cups of fresh breadcrumbs (plain)
2 Tbsp butter
2 Tbsp vegetable oil

Instructions:
1.  Whisk mayonnaise and egg in a large bowl.
2.  Add onion, corn, and seasonings.
3.  Stir in crab meat and 1-1/4 cups of bread crumbs or more to hold mixture together.
4.  Shape into patties. (approx. 8)
5.  Heat oil and butter in a large skillet.  Add crab cakes in batches and fry until browned on both sides.

Note:  Make sure your mixture is not dry before placing in skillet. The crab cake will not hold up well during frying. (Add a teaspoon of water to mixture if too dry.)

I love crab cakes, but I have never made them. I'll save your recipe and give it a try.

Fresh air and new scenery will definitely help your grandmother.

The crab cakes look really yummy! I dont do crab but Ryan loves them! I will have to try them out soon.

mmm- i was in crisfield MD this weekend, and i had broiled crab cakes made with nuthin' but back fin lump! yee hawwww!
